Planty's special partridge!
What a cracker we have here, partridge with a bit of zip. Boy we do love our Saturday evenings where we get to cook the field, and enjoy it we do!
On to the recipe folks
In to a roasting tin goes the following
2 whole partridges
Drizzle bees honey on to the birds
2 chopped onions, in our case 1 red and 1 white
3 finely chopped cloves of garlic
6 fresh chopped plum tomatoes
half a pint of chicken stock
quarter pint of red wine
Tablespoon of tomato puree
2 dashes of sweet chilli sauce
Cook in the oven for 1 hour on 160c
When done remove the birds and cover with foil to rest
Heat remaining cooking juices and use cornflour to thicken, continuously stirring
Our choice of serving, with a glass of red of course.
